Spicy Keto Chili (in the Instant Pot!)

Man, I haven't posted a recipe on the blog for days. But I finally came up with one that deserves a post. I've been doing a Keto diet (on and off) since September 2018 and have lost a solid 16 lbs. I don't even really miss basic carbs that much (like pasta, rice, and bread.) Probably my week spot is tortilla chips... and maybe a girl scout cookie or two.


Anyways - I've made a few Keto Chili recipes in the Instant Pot -- and this is my new, modified recipe. I spiced it up from the others I've seen (because I love some heat!)

Ingredients:
 2 Tbsp Olive Oil
1/2 cup onion, diced
2 jalapenos, diced
1/2 cup carrot, sliced
1 Tbsp Garlic, minced
1 lb ground turkey
4 tsp Chile powder
1Tbsp paprika
1/4 tsp Cayenne pepper
1 can Fire roasted crushed tomatoes (28 oz.)
1/2 cup water
1 tsp Sea Salt
pinch of pepper
1/4 cup Cilantro, minced

Directions:
1.) Pour 1 Tbsp of the Olive Oil in the Instant Pot and turn it to saute mode. Heat the oil and then saute the onion, carrot, garlic, and jalapenos, until they soften.
2.) Add the other 1 Tbsp of Olive Oil and the turkey and cook until it browns about half way.
3.) Add in the spices and continue to cook until no more pink in the turkey.
4.) Add the crushed tomatoes, water and salt and pepper and stir until combined. Cover the Instant Pot (set to sealing) and turn to manual mode for 10 minutes. Let steam release naturally.
5.) Stir in cilantro and serve.

Picky kids Parenting Hack: I serve these with gluten free cornbread muffins for the carb eaters --- and stick hot dogs in the muffins for the kids. They eat leftover cornbread/hotdog muffins for the lunch too!
