One of the recipes from last weeks meal plan was so good that I have to share. Its from Willams-Sonoma One Pot cookbook. Its really easy and delicious. We've made it a few times. I've adapted this to feed 2.
Baked Sausages with Herbed Beans
Serves: 2
Adapted from: Williams-Sonoma One Pot Cookbook
Olive Oil
3 large Kielbasa Sausage (original recipe calls for hot or sweet Italian)
1 Yellow Onion, halved and thinly sliced
Garlic, 2 cloves, minced
Sage, 2 tablespoons, chopped
Chicken broth, 1/2 cup
Cannellini beans, 1 can
Tomato puree, 1/4 cup
salt & pepper
Fresh bread crumbs, 1/4 cup
Parmesan cheese, 1/4 cup
1.) Preheat the oven to 400 degrees. In a Dutch oven over med.-high heat, warm 1 tablespoon oil. Add the sausages and cook, turning occasionally, until browned on all sides, about 5 minutes. Transfer to a plate. Add the remaining 1 tablespoon oil and the onion and sauté until softened, 3-4 minutes. Add the garlic and sage and cook until fragrant, about 1 minute. Pour in chicken broth and bring to a simmer.
2.) Add the beans with their liquid and the tomato puree to the pot and cook until the liquid begins to thicken, about 5 minutes. Season with salt and pepper. Return the sausages to the pot.
3.) In a small bowl, stir together the bread crumbs and Parmesan. Sprinkle the mixture over the top and bake until golden brown, about 20 minutes. Let cool slightly before serving.
