Greek Easter is this Sunday - and I am so looking forward to it. It's one of my favorite holidays. In the past (before kids) I was good about fasting from meat during Lent - but I haven't been as good about it in recent years.
I'm thinking that this year I'd like to do a week of no meat (fish is ok) before Easter. So here is the plan. Luckily I have some great vegetarian cook books too.
Monday: Mediterranean Tuna and Focaccia Sandwiches (from Half Baked Harvest)
Tuesday: Saucy coconut and chickpea curry (from Half Baked Harvest)
Wednesday: Faria Bakery Pizza
Thursday: Kung Pao Roasted Broccoli (from Cravings: Hungry for More)
Friday: Black Bean Spinach Enchiladas
Saturday: Fish tacos
Sunday: Greek Easter! Lamb and all the goodies!
