This is it. Gus finally starts school this week and we can get into a real routine. Of course, he doesn't start until Wednesday but still. There is a light at the end of the tunnel. This weekend we went to a few museums and had a nice time exploring our own city. I love that Lucille can have an appreciation for art at her age.
Anyways - last week I didn't plan out my meals and that made sticking to the keto diet harder and even just coming up with dinner harder. So, I need to get back on schedule. Here is the plan for this week.
Monday: Salmon Cakes
Tuesday: Buffalo Chicken Salad
Wednesday: Pesto Grilled Shrimp
Thursday: Meatballs in red sauce (with Spaghetti for the kids and carb eaters)
Friday: Pork Stir Fry with Vegetables
Saturday: Green Chile Chicken
Sunday: Tacos/Lettuce wraps
