Meal Plan Monday: 8/30

Phew, two weeks into school and having a meal plan last week was super helpful. So here we go again. Last weekend our plans (soccer, basically) were all canceled because of air quality from the Caldor Fire. Hope we can get outside more this week -- but I'm still not going to plan on any BBQ meals.

These enchiladas from last week really are one of my favorite recipes, by the way. I should make them more often. And the homemade enchilada sauce is worth it, FYI. Also, I use real cheese not vegan.

Anyways, here is my plan for this week:

 Monday: Pineapple-Marinated Chicken Breasts and Blistered Shishito Peppers with Soy Garlic Sauce

Tuesday: Chicken Tacos (with leftover meat)

Wednesday: Seared Steak with spicy garlic-miso butter and same skillet asparagus (from Cravings: Hungry for More)

Thursday: Spinach Alfredo Pizza (and a GF cheese for the kiddos)

Friday: Baked Ziti with Meat Sauce (and a salad)

Saturday: Brown sage-butter Chicken Pot Pie (from Half Baked Harvest)

Sunday: Sheet-pan Tarragon Chicken with Sherry Vinegar Onions (add potatoes)
