Meal Plan Monday: May 31

We didn't do a meal plan last week - because the week was just nuts. Lucille has swim practice whenever we can fit it in, Gus had soccer tryouts AND his last two baseball games. Plus we went out of town for Memorial Day weekend. So not much time to really sit and eat together. And since Memorial Day weekend messed up my Monday - I am doing Meal Planning on a Tuesday this week. 😜

But let's get back to it this week. I can't believe that this is the last full week of school for the kids this year. The announcement is that school will return to full time in person next year. So that will be great for them. Nerve-racking for me if they can't get the vaccine yet.. 

Anyways - on to my meal planning for this week!



Monday: Take out! (Got to make it easy since we are just getting back in town.)

Tuesday: Kung Pao Roasted Broccoli (from Cravings: Hungry for More)

Wednesday: Cool Ranch Taco Salad (from Cravings: Hungry for More)

Thursday: Oven baked Tilapia with Cherry Tomatoes

Friday: Turkey Burgers with Zucchini and Carrots (great recipe to sneak veggies for the kiddos)

Saturday: Chicken Ceasar Pasta

Sunday: Eat on the go... SF Giant's Game!

Other stuff: Upside-down Apricot Tart (from Nothing Fancy: Unfussy Food for Having People Over)
