We are doing themed weeks at home to keep the kiddos busy this summer and our first week is Ocean themed. So kicking off today we are doing some themed sandwiches - and then back to normal dinners the rest of the week.
When it is really hot outside, I loose my appetite which make meal planning and cooking a little harder. I try to go for lighter meals, or easy meals -- and I really love a good charcuterie board for dinner on a hot day.
Monday: Sandwiches for dinner (either these Starwiches or Crab Croissants)
Tuesday: Summer Pesto Mini Meatball Soup
Wednesday: Trader Joe's Orange Chicken (with rice and Kung Pao Roasted Broccoli from Cravings: Hungry for More)
Thursday: Chicken and Egg Noodle Casserole
Friday: Out of Town
Saturday: Out of Town
Sunday: Teriyaki Grilled Salmon (from Moosewood Restaurant Cooks at Home)
