Meal Planning Monday: May 3

 I debated if I should plan my meals this week. Last week was a lot of cooking and baking for Greek Easter and by Sunday, I could hardly think about meal planning. 

But I woke up this morning with more drive -- so I figured to go for it! This weekend is Mother's Day and my sister and brother-in-law are coming to visit so I'm going to build in some flexibility. But here is my basic plan.

Monday: Left over pastitso and Everything Bagel Salad with White Beans and Pesto (from Half Baked Harvest)

Tuesday: Sesame honey chicken (one of these amazing easy freezer meals)

Wednesday: Nachos for Cinco de Mayo

Thursday: 5:30 pm Baseball game - so probably frozen pizza early dinner.

Friday: Keeping this night open - for suggestions or ideas from visiting family

Saturday: Loaded Veggie Quesadillas (another baseball game night so it's gotta be quick and easy)

Sunday: Mother's Day! Maybe someone else will cook for me. Or maybe we will order out. Either way, I'm not planning on doing the cooking.

Other things I'll make: Pesto Palmiers (from Moosewood at Home) family Artichoke dip recipe.

Ok! Again, not a really thorough plan -- but enough to make me feel a little more organized going into the week.
