Man, last week was productive and we had a great Mother's Day with my sister visiting and in-laws visiting and my great aunt. It's feels so good that all the grown-ups are vaccinated and we can feel safe hugging and getting close again.
But now it's Monday and I need a plan for the week. I'm not stressing about today but hoping to be able to stick to this plan for the rest of the week so I'm not eating Chipotle every night.
Monday: order out
Tuesday: Oven baked Meatballs in Tomato Cream Sauce
Wednesday: Fish Tacos
Thursday: Potato, Broccoli and Sausage Skillet
Friday: Ground Turkey Nachos
Saturday: Tapas style dinner (Spanish potatoes, grilled chicken, cheeses, etc.)
Sunday: Garlic and Greens pizza (from Half Baked Harvest Simple Suppers Cookbook)
other stuff: Apple Cherry Crisp and Homemade Biscuits (from Moosewood Restaurant Low Fat Favorites)
