I love cookbooks. Looking through pages of recipes for inspiration in the kitchen is fun when you have the time. I hardly do anymore -- but I still love cookbooks and buy new ones all the time. I have a few oldies that I still cook out of and a few oldies that I've kept but hardly ever cook out of.
The Newlyweds' Cookbook is one of those. We got it for a wedding gift -- and I've used it a few times but there wasn't something in the book that I make on any sort of regular basis. With my gluten-free modification of this French Almond Cake -- that has changed.
I'm always hesitant to make a recipe "gluten-free" if it isn't already. but this French Almond Cake only called for 1/2 cup of regular flour -- which wasn't much. So I used Bob's Red Mill Gluten Free 1-to-1 Baking Flour instead and also switched out the 1 cup almonds ground up for 1 cup of almond flour.
This cake was delicious - and a hit with the gluten-free kiddo and the non-gluten-free kiddo. Plus all the gluten eating adults.
Here is the recipe:
1 stick unsalted butter, softened
3/4 cup sugar
3 large eggs, beaten
1 cup almond flour
1/3 cup Gluten Free 1-to-1 Baking Flour
1 tablespoon milk
confectioners' sugar, for dusting
slivered almonds for sprinkling
Put the butter, sugar, and eggs in a large bowl, add the almond flour, 1-to-1 flour, and milk, then beat with an electric mixer until light and fluffy. Spoon it into a 8 inch cake pan that is greased and lined with parchment paper on the bottom. Spread evenly and sprinkle with slivered almonds over the top.
Bake in a preheated over at 350 degrees for 30 to 35 minutes or until the cake just springs back when lightly pressed. Run a knife around the edge of the cake to loosen and turn over onto a cooling rack. Dust with the confectioners' sugar before serving.
I let the kids have some with berries for breakfast and I think I'm going to make it again this week. It really was so easy.
