Menu Planning Monday: Mardi Gras Week

Wow. I haven't done a Menu Planning Monday in FOREVER. But I'm in the mood to be a little more organized with my dinner planning so I'm going to give it a try again. This week is Mardi Gras - so I'm planning an appropriate Fat Tuesday meal. Valentine's Day is Wednesday - but its really going to be more of a normal night around our house.


I'm trying to get the kids to pick dinners that they like - but Gus won't pick anything and Lucille just picks Spaghetti and Meatballs over and over again. Ok, here is my plan for this week:


Monday: Spanish Baked Rice with Chorizo and Chickpeas
Tuesday: Fat Tuesday's Skinny Red Beans with Cornbread, Carolina Kale, and Ginger Peach Crumble for dessert {From my Moosewood Restaurant Low-Fat Favorites Cookbook}
Wednesday: Chorizo & Sweet Potato Enchiladas
Thursday: Night out!
Friday: Mezes for dinner!
Saturday: Out of town
Sunday: Out of town

Ok! That's my plan. Had to use up all the chorizo so we had 2 recipes this week with it. The mezes will include spanakopita, baked giant beans, cheeses, dip, bread... all the good stuff.
