Menu Planning Monday: February 19

Hope you had a nice and relaxing Monday. It was nice to take a little extra time to spend with family this week. Especially after last week and the tragic Valentine's Day we had. It was especially sad to me to hear about the events literally HOURS after enrolling Lucille in Kindergarten. I held them both a little closer this weekend.

They got to run free and act wild and crazy at their papa and grandma's house for a few days - and it was perfect.


On to the menu planning. One week of plans done. It went pretty well - and I am hoping that I can stick to another week all planned out. Out of last week's menu plan - I think the Chorizo and Sweet Potato Enchiladas was my favorite.

Here is what I am thinking for this week:


Monday: dinner out (or pizza)
Tuesday: Winter Rainbow Gratin
Wednesday: Eating on the go night!
Thursday: Bow-tie pasta with corn, thyme, and parmesan {from Curtis Stone's What's For Dinner?}
Friday: Chicken with 40 Cloves of Garlic
Saturday: Potato, Broccoli, and Sausage Skillet
Sunday: Spinach Artichoke Quesadillas

I've got a great bean dip I made recently that I hope to share later this week - so stay tuned!
