Recipe: Gluten-free Fruit Cobbler

I have not had much luck baking with gluten-free flours. The mixes where all you add is milk, eggs, etc. are easier - but when it comes to substituting gluten-free flour or baking mix for regular flour in recipes I already have - it really doesn't ever work for me.

But alas, I am not a baker.

Now - this Fruit Cobbler recipe the substitution worked like a charm. And everyone ate it up - no complaints about a funky gluten-free texture. Here is what I did:

Gluten-free Fruit Cobbler 
adapted from Cooking with all things Trader Joe's
serves 8

1 cup Arrowhead Mills Organic Gluten Free Pancake & Baking Mix
1/4 cup butter, melted
1/2 cup sugar
1/2 cup milk
3 cups fruit (frozen or fresh - I've used strawberries, blackberries, raspberries, blueberries, peaches)
1/4 teaspoon cinnamon

Preheat oven to 375 degrees F.

Use an 8 x 8-inch square oven-proof dish and melt the butter right in the dish (I used the microwave.)


Add Arrowhead Mills mix, sugar, and milk to the melted butter. Stir with a fork until just combined. The batter should be lumpy - don't over mix it. If it seems thin - add a little more flour.

Scatter fruit evenly over batter. Sprinkle cinnamon evenly on top.

Bake for 30-35 minutes. Check center with a fork.

Give it a try! It was delicious and super easy to do. We always have frozen fruit and all the other ingredients it is a quick dessert when you need it.
