I love being able to make food for people. It relaxes me to cook - and I enjoy seeing other enjoy what I've put together. Breakfast is one area where I always need a little inspiration though. Its always toast and fruit for me and the kiddos. Maybe cereal on the days that daddy is home for breakfast.
I own a really GREAT griddle though. And its a shame I don't use it more often. So I decided to buy some pancake mix the other day - and experiment. I really wanted to try some pumpkin cranberry pancakes but couldn't find a recipe that used store bought mix... so I used this recipe as a base and then improvised. They were yummy!
Here is what I did:
1/2 cup pumpkin puree
2 Tablespoons whole milk
1 egg white
1 1/2 teaspoons canola oil
1 cup pancake mix
1/2 cup cranberries
water (as needed)
Heat up griddle to 325 degrees. Mix the pumpkin, milk, egg white and oil in a bowl. Beat until frothy. Add the pancake mix to the pumpkin mix and cranberries and combine. You may need to add a little water for consistency.
Pour batter onto griddle, flipping once. This made us 7 pancakes. They were yummy and easy. Lucille had one too!
