My 3rd week participating in Orgjunkie.com's Menu Planning Monday! This is going to be another week of not much cooking... or late dinners. Last week the Salmon was the only thing I actually made - but at least it was super yummy! So here is my plan... some repeats of things I didn't get to the last two times.
Monday - Out of town
Tuesday - Dinner Out
Wednesday - Something on the grill (chicken?) with Crispy Brussel Sprouts
Thursday - Shrimp, Feta and Fresh Herb Mac and Cheese (didn't get to it the week of the 12th)
Friday - Dinner with Friends!
Saturday - Crab Feed!
Sunday - Spinach Parmesan Squares

I made the crispy brussel sprouts. I was fascinated with cooking the bacon on the sheet pan and then tossing the veggies in their rendered oil. Turned out very good! Instead of all sprouts, I supplemented with diced zucchini and a roughly chopped tomato. I ended up burning the walnuts on the stove as I got distracted when "toasting" them, but oh well - I just threw some non-toasted chopped walnuts & the apple in once the veggies were done roasting. I'll definitely work this combination of flavors into my veggie roasting repertoire.
